Zinzuni, a blend of our Typica and Bourbon beans, offers a superb bold chocolate flavour that accompanies a natural sweetness and deep buttery flows.
The natural process of these Typica and Bourbon cherries commences with meticulous handpicking at the exact moment of optimal sugar content development. Following this, the cherries undergo a soaking phase to separate floaters before being delicately arranged on raised (African) beds. They are exposed to direct sunlight for the initial 3-4 days, followed by a gradual transition to partial shade over the subsequent 2-3 weeks during the drying process.
