Varieties and Processes
Our harvest begins with a careful selection of red cherries blossoming with ripeness. Using alternative methods such as natural, semi-washed (honey), and washed processes, our production is composed of small lots of Typica and Bourbon (arabica) varieties.
Climates and Soil
From bloom to harvest, our cherries are the result of a unique fusion of elements. They are born from melding an idyllic environment together, comprising of high altitudes 1400 to 1800 meters above sea level, a nourishing climate, and nutrient-rich soil of volcanic origin.
Grading and Quality
After the harvest, green coffee samples undergo a rigorous cupping process (this includes samples sent to certified Q graders). This thorough evaluation validates the necessary standards to classify the coffee in the specialty category.
